Cajun style boudin? What does it look / taste like? There is a famous sausage in Belgium called boudin.
It is to be found as white or black boudin, but basically the same sausace, the black ones do have some blood
in it to give it the dark colour. It is made with lots of breadcrumbs and lots of fresh parsley, I doubt if there
are many ingredients from an animal in there, but they taste very good. Usually you fry them carefully and they go with bread
or some vegetable.
I would like to know more about the hungarian sausage with rice in it.
There are very few restaurants that (pretend to) serve Cajun style food over here. I bought a cook book once, but ingredients are
hard to find, It´s easier to cook Asian style over here.
